Apple Crisp For One

I’m not gonna waste any of your time before getting into this one. Here is my recipe for a single serving apple crisp —

I love making apple crisp for the holidays and the Fall/Winter season, but who has the time or energy these days to slice up a whole bag of apples and race against the clock and the browning of your apples?? No one I know. This is that recipe for those nights where you want a sweet treat, you have a leftover apple from the week that might be going bad any day now, but you want something a little more than just 4 bites of ice cream straight from the carton.

Servings: one Prep time: 10 minutes Cook time: 30 minutes Total time: 40 minutes

Ingredients:

Apple Filling:

  • 1 medium sized apple

  • Splash of lemon juice (about 1 teaspoon)

  • 2 tablespoons flour

  • 2 tablespoons brown sugar

  • ¼ teaspoon cinnamon

  • 1 tablespoon butter (melted)

Crisp Topping:

  • 2 tablespoons butter (softened)

  • 2 tablespoons brown sugar

  • 2 tablespoons oats

  • 2 tablespoons flour

  • ¼ teaspoon baking powder

  • ¼ teaspoon cinnamon


Directions:

  • Preheat oven to 350.

  • Prep a small ramekin or baking dish with cooking spray or butter (No measurements for baking dish here, if your apples and topping can comfortably sit in your dish that is good. The apples will cook down and shrink a bit during baking! - Size will only affect cook time. See below.)

  • Peel and slice your apples into bite size pieces and set aside in a small mixing bowl (add in your splash of lemon juice as you are slicing your apples to avoid browning.)

  • Add the melted butter, flour, brown sugar, and cinnamon into the bowl with the sliced apples and mix until combined.

  • Pour the apple mixture into your prepared baking dish and set aside. 

  • In the same mixing bowl (or a different one, it doesn’t matter) combine softened butter, brown sugar, oats, flour, baking powder, and cinnamon. Use your fingers or a fork to mash and combine the topping all together into a crumbly dough-like mixture.

  • Crumble the topping with your fingers and spread into an even layer on top of the apple mixture in the baking dish.

  • Place in the oven and bake for 25-30 minutes or until the apples are fork soft and the topping is brown and bubbly around the sides. (Note: Baking time may vary based on your baking dish size. If your apple slices are stacked in many layers and packed on top of each other, baking time may be slightly longer. To test if your apples are done, poke the apple crisp with a fork or knife. If the apples are tender and poke easily, they are done.)

  • Remove from the oven when done and let cool for 5-10 minutes to allow the filling to set before serving. Enjoy with vanilla ice cream or on its own!


( Note: If your topping is getting too brown too fast during cooking and your apples are not cooking quick enough, cover your baking dish with a layer of foil before placing it back into the oven. )
